Lobster Ceviche
INGREDIENTS
Appetizer for Two People
- 1/4 cup fresh squeezed lime juice
- 1/2 pound diced raw spiny lobster meat from the tail
- 1/4 medium white onion, chopped into 1/8 inch pieces
- 3 tablespoons of chopped fresh cilantro (save some for side garnish)
- 1 tomato diced into ¼” pieces
- 1 table spoon of tapatio or cholula hot sauce
- 1 teaspoon V8 juice
- 1/4 cup diced peeled cucumber
- 1 small ripe avocado, pitted and diced
- add Salt to taste
DIRECTIONS
- Marinate the lobster in Lime juice for 15 minutes, then remove any excess lime juice before mixing all ingredients together.
- Serve in cleaned lobster carapace or margarita glass with tortilla chips on the side.
WINE PAIRING
pinot grigio or riesling would be best because of the greater amounts of acidity from the lime juice needed to denature the proteins of the lobster, it is essential that your wine be sweet, fresh, and bold enough to enhance the flavors of the ceviche and complement the wine.
